So much "off Grid" content you see is hard to believe.....
While I cant tell you whats real and whats not on the internet, I can show you what it looked like for my wife Brooke and I to get started on this journey of off grid living.....
The pretty stuff and the ugly.

enjoyable (for young people, and he just said young people as I typed that)...
but teflon cooking tray?
still, compared to self sufficiency me(and my working wife to pay for the raised bed tanks etc etc....
light soft wood, no 2m high weeds, then again, warm is good.
had a super cell style storm the other day, took out 15 power lines (they told me on the phone)... including across my drive. so next morning I go to it, those solar panels and regulators I have stored for years.. too much learning curve to get anything going, multimeters confusing or not working... failure. but I got the laptop charged again on the 5kw batteries I already have (albeit only half charged).. and they got the lines working by afternoon. hav charged those batteries fuller now, and they seems to be functional, neglected unused poor things they are. showed my how unprepared I was. would have lost $500 in the freezers. still, too much of my limited time/ability on weeds, grass, and the bloody machines to keep running. I have learnt not to fret about the potentials not realised. and the bats will probably get the bananas again before I get around to putting bags on them after cutting the grass under them after i get the brushcutter going again... yeh self sufficiency me.

There is the benefit of learning how to do stuff by yourself.
But other than that it's really just a meme.

Even more so if you get people in a major city calling for living off grid, just like how all these YouTubers calling for using alt tech while they themselves remain on YouTube, or cryptobros calling for privacy while using Windows 10 or 11.
Or people going like "remove Telegram, they violate our privacy, join my Discord chatroom to discuss privacy herp derp".
